  1. 1 pound kale , cut up

  2. 2 potatoes

  3. 2 tablespoons unsalted butter

  4. sprinkle freshly ground pepper

  1. Peel, quarter and boil the potatoes for twenty minutes.

  2. Remove the potatoes with a slotted spoon.

  3. Add the kale to the boiling water. Cook for 3-4 minutes.

  4. Mash the potatoes, stir in the kale. Sprinkle with pepper.

  5. Melt butter in a frying pan.

  6. As soon as the mixture is cool enough, form in to patties and lay in the hot butter.

  7. Cook on both sides until browned and serve.

  8. Leftovers You may add bullion powder, vegetables and cooked meat of your choice to the leftover broth to make a lunchtime soup.

  9. I have successfully warmed up leftover patties in the microwave to add as a side dish a day later.
