  1. 2 cups cauliflower , chopped

  2. 1/2 red bell pepper , chopped

  3. 1/2 cup broccoli , chopped (or green beans)

  4. 1 1/2 cups mandarin orange segments

  5. 3 tablespoons fresh lemon juice

  6. 3 tablespoons olive oil

  7. 1 teaspoon honey (or pure maple syrup)

  8. 1/2 teaspoon orange zest

  9. 1 dash salt (or to taste)

  10. 1 dash pepper (or to taste)

  1. In a covered bowl, toss all ingredients & allow to marinate EITHER for 3 hours at room temperature, stirring often.

  2. Divide into 2 serving bowls & ENJOY!
