  1. Ingredients (serves 4)

  2. 2 cups coarsely shredded roast turkey

  3. 1/2 wombok (Chinese cabbage), finely shredded

  4. 1 cup (55g) bean sprouts, trimmed

  5. 1 carrot, peeled, cut into matchsticks

  6. 1 red capsicum, halved, seeded, thinly sliced

  7. 1/2 cup Vietnamese mint leaves

  8. 1/2 cup coriander leaves

  9. 1/4 cup Thai basil leaves

  10. 1 1/2 tbs toasted sesame seeds

  11. Sesame dressing

  12. 1 tbs fish sauce

  13. 1 tbs brown sugar

  14. 1 tbs lime juice

  15. 1 fresh red chilli, seeded, finely chopped

  16. 2 tsp sesame oil

  17. 2 tsp finely grated ginger

  1. To make the sesame dressing, place the fish sauce, sugar, lime juice, chilli, sesame oil and ginger in a screw-top jar and shake until well combined.

  2. Place the turkey, cabbage, bean sprouts, carrot, capsicum, mint, coriander and basil in a large bowl. Pour over the dressing and gently toss to combine.

  3. Divide evenly among serving bowls. Sprinkle with sesame seeds and serve immediately.
