  1. 250g plain flour

  2. 400g caster sugar

  3. 2 eggs

  4. 2 teaspoons bicarbonate of soda

  5. 1 (567g) tin pineapple with juice, pureed

  6. 225g cream cheese, at room temperature

  7. 110g butter

  8. 190g icing sugar

  9. 1 teaspoon vanilla extract

  1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm cake tin, and line with parchment.

  2. In a large bowl, mix together the flour, sugar and bicarb. Make a well in the centre and add the eggs, vanilla and pureed pineapple (pureed with its juice from the tin). Mix well to blend and tip into prepared tin.

  3. Bake for 45 minutes, or until a skewer inserted into cake comes out clean.

  4. To make the icing: in a medium bowl, combine cream cheese, butter, icing sugar and 1 teaspoon of vanilla. Beat until creamy. Spread on warm cake.
