  1. 1/4 cup extra virgin olive oil

  2. 1 1/2 tablespoons fresh lemon juice

  3. 1/2 teaspoon harissa or 1/2 teaspoon hot sauce

  4. salt

  5. fresh ground pepper

  6. 1 1/2 lbs seedless watermelon , rind removed,fruit sliced

  7. 1/4 inch thick

  8. 1/2 small red onion , thinly sliced

  9. 1/4 cup coarsely chopped flat leaf parsley

  10. 1/4 cup pitted oil-cured black olive , coarsely chopped

  11. 2 ounces feta cheese , crumbled (about 1/2 c.)

  1. In a small bowl, whisk the olive oil with the lemon juice and harissa and season with salt and pepper.

  2. Arrange the watermelon slices on a platter and sprinkle with the onion, parsley, olives and feta.

  3. Drizzle the dressing on top and serve.
