  1. 4 pounds Filet of fish

  2. 1 Green pepper, chopped

  3. 3 Garlic cloves, chopped

  4. 3 Bay leaves

  5. 1 can Stewed tomatoes, pureed

  6. 2 larges Onions, chopped

  7. 4 Celery stalks, chopped

  8. Bunch parsley, chopped

  9. x Pinch of sugar

  10. 6 Potatoes, cut-up

  11. x Olive oil

  1. Saute onions, pepper, celery, garlic, and parsley in olive oil. Add blended tomatoes and bay leaves. Cook approximately for 1 hour, add sugar. Oil a roasting pan, season the fish with salt and pepper. Place fish in pan with cut-up potatoes. Pour sauce over potatoes and fish. Bake for approximately 1 hour. Basting every 15 minutes.
