  1. 4 boneless skinless chicken breast halves

  2. 1 c chopped onion

  3. 1 tbsp olive oil

  4. 1 14 1/2oz can diced tomatoes w/basil, garlic and oregano

  5. 2 c broccoli florets

  6. 1 c mozzarella cheese -- shredded

  7. 3 minutes per side. Add tomatoes to skillet. Bring to boil; reduce heat. Simmer, uncovered,

  8. 5 minutes. Add broccoli; simmer

  9. 5 minutes more or until chicken is done and broccoli is tender.

  10. Top with cheese during last 2 minutes. Serve over pasta or rice, if desired.
