  1. 3 tablespoons olive oil

  2. 1 onion , diced

  3. 1/2 cup celery , diced

  4. 1/2 cup carrot , diced

  5. 1/2 cup pecans , chopped

  6. 1/2 cup wild rice

  7. 1/2 cup brown rice

  8. 1 cup mushroom , diced

  9. 3/4 cup beef broth

  10. 3/4 cup chicken broth

  1. Heat the oil in a large oven proof skillet. Add the onion, celery, and carrots. Cook until just soft.

  2. Add the mushrooms, pecans, and rice. Cook for 5 minutes, stirring frequently.

  3. Add the broth, stir well, cover and place in a 350 degree oven for 50-60 minutes or until rice is tender.
