  1. 2 cups 474ml Cooked am quinoa

  2. 1 cup 146g / 5.1oz Parsley - chopped

  3. 1/2 cup 31g / 1.1oz Chopped green onion

  4. 1 Garlic clove - pressed

  5. 1/2 teaspoon 2 1/2ml Basil

  6. 1/2 cup 118ml Lemon juice

  7. 1/4 cup 59ml Am unrefined olive oil

  8. 1/8 teaspoon 0.6ml Sea salt -

  9. 1/8 teaspoon 0.6ml Pepper -

  10. 1 Lettuce leaves

  1. Mix first 9 ingredients and place in a salad bowl lined with washed lettuce leaves.

  2. Refrigerate for at least two hours to let flavor blend.

  3. Fresh mint and black olives make nice garnishes for this dish.
