  1. 1 large onion, chopped fine

  2. 2 cups cooked fluffy rice

  3. 4 tablespoons butter

  4. 1 teaspoon salt

  5. 1/4 cup ketchup

  6. 4 eggs

  1. Combine onion and rice. Melt butter in a frying pan. Add onion and rice mixture then stir in salt. Cook, stirring constantly, until onion is limp. Stir in ketchup. Turn mixture into a shallow casserole and make a hole in center. Crack eggs carefully and slip into hole. Bake in a 350 degrees oven until eggs are set, 10-15 minutes. Serve immediately.
