  5. 4 sl Bacon lean

  6. 1 md Onion, coarsely chopped

  7. 3 cl Garlic minced

  8. 1 Jalapeno or other hot chilli

  9. Minced 1 t Oregano dried

  10. 1/2 t Cumin

  11. Dash tobasco or two dashes

  12. 1 t Taco seasoning

  13. 3/4 c Rice (instant)

  14. 1/2 c White wine

  15. 1 c Stewed tomatoes

  16. Style 15 1/2 oz.

  17. 1 c Chilli Beans (15 1/2 oz)

  18. 6 c Chicken broth

  19. 3 Chicken breast cooked chop

  20. Into bite size pieces

  21. 4 oz Montery Jack cheese

  22. 2 T Fresh cilantro chopped

  23. Directions;

  24. In 6 quart dutch oven, cook bacon over med heat. Cook until crisp.

  25. Pour To bacon grease add onion, garlic, and peppers and cook over low

  26. heatstirring occasionally. Cook until softened about 4 minutes. Add

  27. oregano, cumin, taco seasoning, and rice, toss and cook about 1

  28. minute. Pour wine over mixture to deglase pan. Add stewed tomatoes

  29. that have been lightly blended to remove large chunks. Then pour in

  30. chicken broth, and can chilli style beans.

  31. Reduce heat to med -low, cover and simmer 30 minutes.

  32. Add chopped chicken breast about 15 minutes before serving, season

  33. with salt and pepper to taste. Add crumbled bacon and cilantro.

  34. Stir in grated cheese stir until melted. Serve hot. garnish with

  35. cilantro if desired.
