  6. 1 cup 237ml Mayonnaise or salad - dressing

  7. 1/4 cup 27g / 1oz Carrot - finely chopped

  8. 1/4 cup 27g / 1oz Celery - finely chopped

  9. 1/4 cup 4g / 0.1oz Fresh cilantro - finely chopped

  10. 3 tablespoons 45ml Orange juice

  11. 1/2 teaspoon 2 1/2ml Salt

  12. 1/2 teaspoon 2 1/2ml Ground cinnamon

  13. 1/4 teaspoon 1 1/3ml Freshly ground pepper Lettuce leaves

  14. 3 Oranges - pared and sectioned

  15. 2 Avocados - peeled, cut into

  1. Recipe Instructions Mix scallions, lime juice and 1/4 teaspoon salt; cover and refrigerate. Mix remaining ingredients except lettuce, oranges and avocados. Cover and refrigerate at least 1 hour. Spoon chicken mixture onto lettuce. Garnish with oranges and avocados. Sprinkle with scallions.
