  1. Mock Apple Pie

  2. 2 crust

  3. 9 inch pie

  4. 36 Ritz crackers

  5. 2 cups water

  6. 2 cups sugar

  7. 2 teaspoons cream of tartar

  8. 2 tablespoons lemon juice

  9. Grated rind of one lemon

  10. 2 tablespoons butter or margarine

  11. Roll out bottom crust and fit into 9 inch pie pan. Break crackers

  12. coarsely. Combine water, sugar and cream of tartar in saucepan.

  13. Boil gently for 15 minutes. Add lemon juice and rind. Cool. Pour

  14. syrup over crackers, dot with butter or margarine and sprinkle with

  15. cinnamon. Cover with top crust. Trim and flute edges together. Cut 425 degrees

  16. 30 to

  17. 35 minutes until crust is golden. Makes

  18. 6-8 slices.
