  5. 2 1/4 cup Durum flour

  6. 1/2 ts Sea salt

  7. 1 tb Canola oil

  8. 2/3 c -Very warm water

  9. Combine flours and salt in a large mixing bowl.

  10. Mix in oil and water to form a stiff dough, adding more

  11. water if necessary. Remove dough from bowl and knead on a

  12. lightly floured surface until smooth, about 5 minutes.

  13. Return dough to bowl, cover with a towel and set aside in

  14. a warm place for one hour.

  15. Turn dough out onto a lightly floured surface and divide

  16. into 14 equal portions. Roll each piece into a ball and cover with a damp towel.

  17. Heat an ungreased griddle or large frying pan over medium

  18. heat. Working with one ball of dough at a time, flatten

  19. it, then roll into a 6 circle, using only enough flour to

  20. keep dough from sticking. When griddle is hot, pick up

  21. dough, shake off excess flour and place it on a hot pan.

  22. Cook until brown spots appear, about one minute. Flip

  23. dough over and cook on other side. (Chapati may puff up

  24. while cooking.)

  26. chapatis.
