  2. 450 g 2 stalks

  3. 2 fresh 6 cloves

  4. 45 ml 1 teaspoon 1/4 teaspoon 50 ml 2 medium 100 g 1 teaspoon 50 g A few sprigs

  5. Fillet steak, sliced very thinly across the grain

  6. and cut into 5 x 7 1/2cm pieces Fresh lemon grass, sliced paper-thin and finely chopped Red chili peppers, minced

  7. Garlic, minced

  8. Nuoc Mam sauce

  9. Arrow root or cornflour

  10. Freshly ground black pepper

  11. Vegetable oil

  12. Medium onions, finely sliced

  13. Button mushrooms

  14. Sugar

  15. Roasted peanuts

  16. Coriander to garnish

  1. Combine the beef, lemon grass, chili, halfthe garlic, 30 ml Nuoc Mam sauce, arrowroot, black pepper and 30 ml oilin a bowl. Set aside for 30 minutes.

  2. Pour 1 teaspoon oil in the wok over amedium heat and add the onions and the remaining garlic. Stir fry for1-2 minutes until they are golden brown. Remove the onions and setaside.

  3. Add 8ml more oil, when hot, add the beef,the mushrooms, the rest of the Nuoc Mam sauce and the sugar. Saute overa high heat for 1-2 minutes or until the beef is just cooked.

  4. Scoop the food from the wok and arrange iton a warmed serving dish.

  5. Arrange the sauteed onions around it andsprinkle the peanuts and black pepper over everything.

  6. Garnish with coriander sprigs.
