  1. 2 cans (14 oz each) quartered artichoke hearts in water, drained

  2. 1 can (14 1/2 oz each) Hunt's® Petite Diced Tomatoes, undrained

  3. 3/4 cup quartered and sliced red onion

  4. 1/4 cup thinly sliced green onions

  5. 1/4 cup minced jalapeno pepper

  6. 1/4 cup chopped fresh cilantro

  7. 2 tablespoons minced garlic

  8. 1/4 cup fresh lime juice

  9. 2 tablespoons olive oil

  10. 1/2 teaspoon ground black pepper

  11. 1/4 teaspoon kosher salt

  1. Combine all ingredients in large bowl. Mix well. Chill 45 minutes. For a richer flavor, use marinated artichoke hearts instead of artichoke hearts in water. This recipe can be served in a variety of ways -- try it as an appetizer served with tortilla chips or wedges of pita bread. Or, serve as a salad on lettuce leaves.
