  11. 1 pound green beans, washed, ends remove

  12. 2 teaspoons extra virgin olive oil

  13. Coarse grained salt and cracked black pepper to taste

  14. 1 to 2 tablespoon of freshly squeezed lemon juice

  15. 1 ounce Parmesan cheese curls*

  16. 2 tablespoons toasted pistachios, roughly chopped

  1. Bring eight cups of salted water to a boil. Place green beans in the pot and cook to your desired degree of doneness. Strain the water off the green beans and place them back in the pot.

  2. Drizzle the olive oil over the beans and stir to coat. Season with salt and cracked pepper, stir once more. Taste and adjust seasonings.

  3. Gradually add the lemon juice to taste. Adjust seasonings.

  4. Divide beans among serving plates. Garnish with cheese curls. Serve about 3 to 5 long cheese curls per guest.

  5. Divide pistachios equally among salad plates. Serve immediately.
