  4. 2 tsp. vanilla extract

  5. 2 c. all-purpose flour

  6. 2 tsp. baking soda

  7. 2 tsp. baking powder

  8. 1/2 tsp. salt

  9. 2 tsp. ground cinnamon

  10. 3 c. grated carrot s

  11. 1 c. chopped pecan s

  12. 1/2 c. butter , softened

  13. 8 oz. cream cheese, softened

  14. 4 c. confectioners' sugar

  15. 1 tsp. vanilla extract

  1. Preheat oven to 350 degrees. Grease and flour a 9x13" baking pan. In a large bowl, beat together eggs, oil, white sugar and, 2 tsp. vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrot and fold in pecans. Pour into prepared pan. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners’ sugar and 1 tsp. vanilla. Beat until the mixture is smooth and creamy. Frost the cooled cake.
