  1. 1 1/4 kg chicken, cut into bite size pieces

  2. 1 1/2 tsp ground ginger

  3. 1 tsp salt

  4. 1 lightly beaten egg

  5. 120 g ground rice vegetable oil for deep frying juice of

  6. 1 lemon

  7. 1 thinly sliced lemon

  8. 55 ml chicken stock

  9. 2 tbsp rice wine

  10. 1 tbsp sugar

  1. Preparation (instructions) In a bowl, rub chicken pieces with ginger and salt. Dip chicken with egg and coat with ground rice. Fill saucepan with oil. When oil is hot, deep fry chicken pieces until golden brown. Remove from oil and drain on kitchen paper towel. To prepare the sauce, add remaining ingredients in a saucepan and bring to boil. Remove from heat and drizzle over chicken. Serve immediately.
