  1. 4 chicken wings, about 1 lbs

  2. 1 oz shallots

  3. 1/2 oz garlic

  4. 2 slices ginger

  5. 2 oz parsley

  6. 5 cups oil for deep frying

  7. 2 extra tbsp sesame oil for brushing

  8. Marinade:

  9. 1 tbsp ginger juice

  10. 1 tbsp wine

  11. 2 1/2 tbsp light soy sauce

  12. 1 tbsp sugar

  13. 1/2 tsp chicken powder

  14. 1/8 tsp pepper

  15. 1 tsp sesame oil

  1. Wash, dry and place the chicken wings on a platter Mince the shallots, garlic and ginger. Wash and mince the parsley.

  2. Put all the minced ingredients into a small bowl then add the marinade and stir until the sugar dissolves. Adjust the seasoning according to taste and pour over the chicken wings to mix thoroughly. Leave aside for 4 hours.

  3. Heat a wok or a deep fryer and bring the oil to boil. Slide in the wings to deep fry for 2 to 3 minutes or until golden brown. Remove and drain.

  4. Put the chicken wings on to a greased rack over a baking tray and place in a preheated oven of 420 degree Fahrenheit (Gas Mark 7) to bake for 5 minutes. Remove and brush with extra sesame oil. Bake for a further 5 minutes. Dish and serve hot or cold.
