  5. 2 lb Boiling potatoes

  6. 3/4 lb Bacon

  7. 1 lb Kale

  8. 2 Cloves garlic

  9. Salt and pepper

  10. 1 c Heavy cream

  11. Chicken stock as necessary

  12. 5 ts Balsamic vinegar

  13. 1 Bunch chives

  14. Diced green onion tops/botto

  15. Peel potatoes and put in a pot with cold, salted water

  16. to cover. Cover pot and bring to a boil. Lower heat

  17. and simmer, uncover, and cook until done, about 25

  18. minutes. Drain, reserving cooking liquid. Break up the

  19. potatoes with a potato masher (they should be quite

  20. lumpy, not smooth). Meanwhile, cook the bacon over low

  21. heat until crisp, turning often. Drain and chop into 1/2 inch chunks. Pour off all but

  22. 2 TBS of the bacon

  23. fat, and, reserve extra fat. Stem and chop the kale.

  24. Mince the garlic. Put half the kale and half the

  25. garlic into the frying pan. Season with salt and pepper and cook over medium heat until kale is wilted,

  26. about 1 minute. Transfer to a bowl. Repeat using more

  27. bacon fat as needed. Return all kale to the fry pan

  28. and add the heavy cream. Simmer over very low heat

  29. until the kale is tender, about 10 more minutes.

  30. Combine potatoes with about 3 cups of the potato

  31. cooking liquid and 1 cup of the chicken stock. Add

  32. more stock if needed to get a good consistency. Add

  33. kale mixture (with the bacon) to the pot and bring to

  34. a simmer. Season to taste with the vinegar and salt

  35. and pepper. This is up to you as to how much vinegar

  36. you use. Mince the chives or green onions and place in

  37. an extra bowl to top the soup. I hope you find this

  38. excellent soup. It is great this time of year as it is

  39. much like a warm German Potato salad. If you pass

  40. this one up you will be the loser. Take care from
