  1. 6 Flounder fillets

  2. 1/2 lb 227g / 8oz Firm white mushrooms

  3. 1/2 cup 73g / 2.6oz Chopped chives

  4. 2 tablespoons 30ml Lemon juice

  5. 1 cup 237ml Light cream

  6. 1/8 teaspoon 0.6ml Nutmeg

  7. 1 Cayenne pepper

  8. 3 tablespoons 45ml Butter

  9. Paprika - to taste

  10. Salt - to taste

  11. Freshly-ground black pepper - to taste

  1. Arrange fillets in a buttered baking dish, cover with sliced mushrooms. Sprinkle with lemon juice and chives. Season cream with salt, pepper, nutmeg and cayenne.

  2. Pour cream over fish and bake at 350 degrees for 15 minutes. Remove from oven, sprinkle with paprika and brown quickly under the broiler.

  3. This recipe yields 6 servings.
