  5. 2 tb Peanut or corn oil

  6. 1 1/2 lb Chopped pork butt

  7. 2 tb Chinese rice wine

  8. - OR - Dry sherry

  9. 1 tb Grated ginger

  10. 1 tb Minced garlic

  11. 6 Green onions; chopped

  12. 1/2 c Hoisin sauce

  13. 1/4 c Hot bean paste

  14. 2 tb Sugar

  15. 1 1/2 tb Soy sauce

  16. 1 c Chicken stock

  17. 2 tb Sesame oil

  18. 1 lb Chinese wheat-flour noodles

  19. - FRESH, (w/ or without egg)

  20. 1 lg Cucumber

  21. - cut into 1/3 cubes Toasted black sesame seeds

  22. Fresh coriander leaves

  23. - (for garnish)

  24. PREHEAT A WOK OR SAUCEPAN over medium-high heat. Add

  25. oil. When hot, lightly brown the pork; break up

  26. clumps. Add rice wine; stir together for 1 minute or until the pork is dry. Push meat up the sides of the

  27. wok. Add ginger, garlic and half the green onions to

  28. the center of the wok; saute until fragrant, about 30

  29. seconds. Add the hoisin sauce, hot bean paste, sugar

  30. and soy sauce to the center; stir-fry until fragrant,

  31. about 30 seconds. Mix the sauce with the pork, add

  32. chicken stock and bring the sauce to a boil. Reduce to

  33. simmer and continue cooking, stirring occasionally

  34. until sauce has thickened into the consistency of

  35. spaghetti sauce, about 10 minutes. Swirl in half of

  36. the sesame oil. Keep warm. Bring 3 quarts of water to

  37. a boil. Separate strands by gently pulling the ball of

  38. noodles apart. Add noodles to boiling water; stir with

  39. a pair of chopsticks. When water reaches the second

  40. boil, add 1 cup cold water and let it come to a boil

  41. again. Pour into a colander. Rinse with cold water.

  42. Drain thoroughly and set aside. Toss with remaining

  43. tablespoon sesame oil and remaining green onions.

  44. Divide noodles among 6 flat soup plates or bowls.

  45. Spoon meat sauce on top. Garnish with cucumber, black

  46. sesame seeds and fresh coriander leaves. --
