  2. Pasta with Broccoli and Spinach

  6. 200 grams Penne

  7. 1/4 cup White wine

  8. 15 grams Butter

  9. 3 Spinach leaves

  10. 1/2 Onion

  11. 1/4 cup Grated parmesan cheese

  12. 1/4 teaspoon Ground nutmeg

  13. 1/4 cup Grated cheddar cheese

  14. 125 grams Broccoli florets

  15. Preparation: chop the onion and shred the spinach leaves.

  16. Alternative to wine: white grape juice works just as well.

  17. 1. Cook the pasta in a large quantity of boiling water until just tender.

  18. Drain and place in a greased, shallow, ovenproof dish and keep warm.

  19. 2. Melt the butter in a large pan. Add the onion and cook over a low heat

  20. for 3-4 minutes.

  21. 3. Add the nutmeg, broccoli and spinach. Pour over the wine or grape juice.

  22. 4. Cover and cook over a low heat for 5 minutes.

  23. 5. Spoon the vegetable mixture over the pasta. Top with the cheeses and 180C for 5 minutes, or until the cheese has melted and browned.

  24. Serve immediately.
