  1. 1 teaspoon 5ml Cumin

  2. 1/2 teaspoon 2 1/2ml Cinnamon

  3. 1 Cloves

  4. 1 Ground red pepper

  5. 1 tablespoon 15ml Fresh lime juice

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/4 teaspoon 1 1/3ml Grated lime peel

  8. 2 tablespoons 30ml Vegetable oil

  9. 2 cups 125g / 4.4oz Finely chopped cooked chicken

  10. 1/2 cup 55g / 1.9oz Finely chopped celery

  11. 1/2 cup 31g / 1.1oz Thinly sliced green onions

  12. 1 Fresh jalapeno - or serrano chile, seeded and minced

  13. Lettuce leaves

  14. 1 Avocado - sliced

  15. Lime wedges - for garnish

  1. Combine cumin, cinnamon, cloves and red pepper in small saucepan. Heat, stirring, over low heat until fragrant, about 30 seconds. Transfer to large bowl. Add lime juice, salt and lime peel. Whisk in oil. Add chicken, celery, green onions and jalapeno; toss well. Line platter with lettuce leaves. Arrange chicken salad and avocado on top. Garnish with lime wedges.
