  2. 1/2 cup 31g / 1.1oz Unbleached flour

  3. 1/3 cup 65g / 2 1/3oz Sugar

  4. 1/3 cup 53g / 1.9oz Brown sugar; firmly packed

  5. 1/2 teaspoon 2 1/2ml Cinnamon - ground

  6. 5 teaspoons 25ml Butter Filling

  7. 1 1/2 lbs 681g / 24oz Cooking apples;

  8. 1 teaspoon 5ml Lemon juice; fresh

  9. 6 oz 170g Cheddar mild - shredded

  10. 4 teaspoons 20ml Unbleached flour

  11. 1/4 teaspoon 1 1/3ml Nutmeg; ground

  1. Recipe Instructions * Use a cooking apple such as Granny Smith's. Core, peel and thinly Make a high rim around the pie crust. Combine all the dry ingredients in the topping and cut in the butter until crumbly. Set aside. Toss the apples and lemon juice together and add the cheese, flour, and nutmeg, tossing and mixing well. Arrange the apples in the crust and sprinkle on the topping. Bake in a preheated 375F oven for 40 to 50 minutes. Serve warm with Vanilla Ice Cream if desired.
