  1. 1 ea Medium eggplant -peel & dice

  2. 1/2 c Shopped onion

  3. 1 ea Clove of garlic

  4. 1/2 c Sliced mushroom

  5. 1/4 c Olive oil

  6. 1 T All purpose flour

  7. 1 cn Tomatoes (drained)

  8. 16 oz.

  9. 1/2 t Salt

  10. 1/2 t Brown sugar

  11. 1/4 t Dried whole basil

  12. 1/8 t Pepper

  13. 2 T Grated Parmesan cheese

  1. Cook eggplant in boiling water (salted) 8-10 min.

  2. , drain well.

  3. Saute onion, garlic, mushrooms in olive oil.

  4. Add flour, stir until smooth.

  5. Add tomatoes and other ingredients.

  6. Bring to a boil.

  7. Remove from heat.

  8. Layer in lightly grease 1 qt.

  9. casserole, top with Parmesan cheese.

  10. Bake at 375 degree for 25 minutes.
