  1. 2 tablespoons butter

  2. 1 tablespoon crushed garlic

  3. 4 cup chopped fresh (in season) or frozen okra

  4. 3 cup freshly diced tomatoes

  5. 1 cup chopped onions

  6. 1 teaspoon granulated sugar

  7. 1/2 teaspoon black pepper

  8. 1/2 teaspoon dried thyme

  9. 1/4 teaspoon dried rosemary

  10. 1/4 cup grated Parmesan or Romano cheese

  1. In a large skillet, heat the butter and sauté the garlic over medium heat until light and browned. Add the okra; reduce heat to low and cook for 15 minutes, stirring occasionally. Add the tomatoes, onions, sugar, pepper, thyme, and rosemary and continue cooking for 5 minutes. Remove from the heat and stir in the cheese.
