  3. 1 teaspoon balsamic vinegar Salt and freshly ground black pepper

  4. 1/4 cup mayonnaise GARNISH Parsley sprigs Paprika Cayenne Pepper

  1. Mash the yolks with a fork. Combine with the vinegar and mustard, salt and pepper, and mix well. Add the mayonnaise and mix into a smooth paste. Adjust the seasonings. Scrape the mixture into a plastic bag. Snip one corner off or the bag and ’pipe’ the filling into the whites. Garnish as desired. Smoked paprika and cayanne pepper add a nice zip to the eggs.
