  1. 1 cup Quick or Old-Fashioned Oatmeal

  2. 1 1/2 cups flour

  3. 1 1/4 cups processed cheese food -- shredded

  4. 3 tablespoons sugar

  5. 1 tablespoon baking powder

  6. 1/2 teaspoon chili powder

  7. 1/2 teaspoon salt (opt.)

  8. 1/4 teaspoon pepper -- coarsely ground

  9. 1/2 pound bacon, cooked & crumbled

  10. 1/3 cup oil

  11. 1/4 cup egg substitute

  12. 1 cup skim milk

  13. 400. Grease muffin tin well. In large bowl combine oats, flour, sugar, baking powder and seasonings; set aside. In another bowl, combine oil, egg substitute and skim milk. Make a well in center of dry mixture. Pour wet ingredients into dry ingredients; stir until just moistened. Gently fold in bacon and cheese. Portion muffin batter evenly into prepared muffin tin (about 1/3 cup). Bake about 20-25 minutes or until lightly golden brown.
