  1. PEACH UPSIDE DOWN CAKE

  2. 2 lbs. peaches

  3. 1/2 cup light brown sugar

  4. 2 1/4 cup flour

  5. 1 1/2 tsp. baking soda

  6. 1/4 tsp. salt

  7. 1/2 tsp. cinnamon

  8. 1/2 tsp. ground ginger

  9. 1/4 tsp. ground nutmeg

  10. 1 cup granulated sugar

  11. 1 egg

  12. 1 tsp. vanilla extract

  13. 1 1/2 cup sour cream

  14. Heat oven to 350 degrees. Peel and halve peaches. Cook brown sugar

  15. 5 tablespoons butter in

  16. 10 inch cast iron skillet until dissolved.

  17. Off the heat, arrange peach halves, cut sides up, in pan. Combine

  18. flour, baking soda, salt and spices. Beat 8 tablespoons butter

  19. with granulated sugar. Beat in egg and vanilla. Stir in flour

  20. mixture by thirds, alternating with sour cream. Spread over peaches

  21. and bake until toothpick inserted in center comes out clean, 50-55

  22. minutes.
