  1. FRIED TOMATOES (Batter Dipped Tomatoes)

  2. YIELD: 6 servings

  3. 4 medium tomatoes, half ripe

  4. 1/2 cup all-purpose flour

  5. 2-1/2 tsp salt

  6. 2-1/2 tsp sugar

  7. 1/4 tsp pepper

  8. 3/4 cup evaporated milk

  9. oil for frying

  10. Wash tomatoes, but do not peel. Cut into 3/4-inch slices. Place on

  11. paper towels to drain. Combine flour, salt, sugar and pepper. Dust

  12. tomatoes in flour mixture on both sides. Add evaporated milk to

  13. rmaining flour mixture to make a thick batter. Dip floured tomatoes

  14. in batter. Fry in hot oil 1/2-inch deep until golden brown on both

  15. sides.
