  1. 30g butter

  2. 2 tablespoons dark brown soft sugar

  3. 2 cloves garlic, finely chopped

  4. 1 tablespoon lemon juice

  5. 2 teaspoons soy sauce

  6. 1/2 teaspoon ground black pepper

  7. 1 (450g) halibut steak

  1. Preheat barbecue for medium-high heat.

  2. Place butter, dark brown soft sugar, garlic, lemon juice, soy sauce and pepper in a small saucepan. Warm over medium heat, stirring occasionally, until sugar is completely dissolved.

  3. Lightly oil barbecue grate. Brush fish with dark brown soft sugar sauce and place on barbecue. Cook for 5 minutes per side or until fish can be easily flaked with a fork, basting with sauce. Discard remaining basting sauce.
