  1. 1 cup 62g / 2 1/5oz Whole wheat flour

  2. 2 Baking powder

  3. 1/2 Salt

  4. 1 3/4 cups 70g / 2 1/2oz Kashi® Good Friends cereal

  5. 3/4 cup 177ml Skim milk - rice or soy milk

  6. 1/4 cup 59ml Honey

  7. 2 Egg whites

  8. 1/4 cup 59ml Unsweetened apple sauce

  9. 1 cup 237ml Ripe banana - mashed (medium)

  10. Non-stick cooking spray

  1. Preheat oven to 400°F In a small bowl, stir together flour, baking powder and salt. Set aside. In a large mixing bowl, combine Kashi Good Friends cereal and milk and let stand for 2-3 minutes. Add the egg whites and beat well. Stir in apple sauce, banana and honey. Add flour mixture and mix only until dry ingredients are moistened (over-mixing will produce rubbery muffins).

  2. Fill sprayed muffin tins. Bake for 20-25 minutes or until lightly browned.
