  1. Pave d'roy (king's road)

  2. 120 grams ground almond

  3. 150 grams icing sugar

  4. 2 egg

  5. 4 yolks

  6. 25 grams flour

  7. 25 grams cocoa powder

  8. 5 whites

  9. 60 grams sugar

  10. 100 grams water

  11. 20 grams grand mariner

  12. 300 grams dark chocolate

  13. 150 grams butter

  14. 6 yolks

  15. 8 whites

  16. 80 grams sugar

  17. 1 orange

  18. 50 grams sugar

  19. 40 grams water

  20. 100 grams vermicelli

  21. 50 grams green marzipan

  22. Mix the almond powder and icing sugar together and add in the eggs

  23. and yolks. Add the cocoa and flour. Beat the whites to a soft

  24. peak, add the sugar, beat to almost hard peak. Incorperate into the mix. Chemisier (coat with butter, then coat with flour, shake

  25. 8 inches or so. Bake at

  26. till the cake is done (a toothpick comes out clean).

  27. Boil the sugar and water together. When it starts boiling, take it

  28. off the heat and add the grand marinier.

  29. Melt the chocolate over a bain-marie (double boiler). Add the yolks

  30. and butter, mix well. Whip the whites to soft peak, add the sugar,

  31. whip almost to hard peak. Add a small amount to the mousse and mix

  32. it in well. Add the rest and incorperate gently.

  33. Peel the orange, saving the peel. Remove as much white off the peel

  34. as is possible and chop into small cubes 2-5 cm in length. Put in

  35. water and sugar (the amounts don't matter) and boil for 5 minutes.

  36. Throw out water, wash orange peels, and do it again untill the

  37. syrup reaches softball stage. Let sit for a long time.

  38. Invert cake and Cut in half. Brush the syrup over the bottom and sprinkle with candied peel. Put a layer of chocolate mousse on the

  39. bottom layer. Spread syrup on inside of other half and put the top

  40. layer on. Cover the entire cake with mousse. The top should be

  41. the flat part at this point. Decorate with mousse rosettes, sprinkle

  42. with orange peel, and put vermicelli on the sides of the cake.

  43. Vermicelli is optional. Roll out the marzipan so that it is a long

  44. strip. Put the strip on the cake from corner to corner and write

  45. "Roy" on it with white chocolate.
