  1. 2 tablespoons lemon juice

  2. 4 cups sliced cooking apples -- pared cored

  3. 1/2 cup brown sugar

  4. 1/4 cup cream of rice

  5. 1/2 teaspoon cinnamon

  6. 1/2 teaspoon nutmeg

  7. 1/4 teaspoon ginger

  8. 1/4 teaspoon salt

  9. 1 tablespoon vegetable oil -- optional

  1. Preparation : Mix lemon juice with apples, then add sugar, cream of rice, spices and salt; mix lightly but well. Place in a lightly oiled deep 1 quart baking dish. Sprinkle with vegetable oil. Cover and bake in a preheated 350 degree oven 1 hour. Remove cover for last 5 minutes of baking. Serve warm or cold. Makes 4 servings.
