  1. 1 lb. deli vegetable side dish

  2. 15 oz. can spicy chili beans, undrained

  3. 1/2 tsp. chili powder

  4. 8 (8") flour tortillas

  5. 1-1/2 cups shredded Pepper Jack cheese

  1. In a large skillet, combine vegetables, beans and chili powder. Bring to a boil. Reduce heat and simmer for 6-8 minutes until vegetables are tender, stirring occasionally. Spoon 1/2 cup vegetable mixture down the center of each tortilla. Top each with about 3 Tbsp. cheese and roll up. If desired, serve with salsa, sour cream, shredded lettuce and chopped tomatoes. Serves 8
