  1. 1 tablespoon olive or vegetable oil

  2. 1 large onion, chopped (1 cup)

  3. 1 medium green bell pepper, cut into 1-inch pieces

  4. 2 cups 1-inch pieces eggplant (3/4 pound)

  5. 1/2 cup water

  6. 1/4 teaspoon salt

  7. 1 medium zucchini, cut lengthwise in half, then cut crosswise into 1/4-inch slices (2 cups)

  8. 2 cans (14 1/2 ounces each) diced tomatoes with basil, garlic and oregano, undrained

  9. 1 can (15 ounces) black beans, rinsed and drained

  10. Shredded Parmesan cheese, if desired
