  1. 2 cups cranberries , cut in half

  2. 1/2 cup sugar

  3. 3 1/2 cups flour

  4. 1 1/2 cups sugar

  5. 1 tablespoon baking powder

  6. 1 teaspoon baking soda

  7. 1 teaspoon salt

  8. 2 eggs

  9. 1 1/3 cups orange juice

  10. 1/4 cup oil

  11. 1 tablespoon orange rind, grated

  12. 2 cups chocolate chips

  13. 1 cup walnuts , chopped

  1. Preheat oven to 350°F.

  2. Lightly grease 6 mini loaf pans (6x3-inch) or 2 bundt pans (10-inch).

  3. Combine cranberries and ½ cup sugar; set aside.

  4. In large bowl, combine flour, 1 ½ cups sugar, baking powder, baking soda, and salt.

  5. Using a fork, beat eggs, orange juice, oil, and orange rind together. Add to dry ingredients, stirring just until moistened. Fold in cranberry mixture, chocolate chips, and nuts.

  6. Bake for 35-45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan before removing to wire rack. For ultimate freshness, keep refrigerated in a covered container or freeze.
