  1. 1 package fresh celery, sliced

  2. 1 tablespoon olive oil

  3. 1 cup bean sprouts

  4. 1 can mushroom pieces, drained

  5. 1 can sliced water chestnuts, drained

  6. 2 cups cooked chicken, roughly chopped

  7. 3 tablespoons cornstarch

  8. 1/4 cup water

  9. 1 can condensed chicken broth

  10. 1/4 cup soy sauce Chow mein noodles

  1. In a large pot, heat the oil, add the celery and sauté for about 5 minutes or until tender. Add bean sprouts, mushrooms, water chestnuts, and chicken. In the meantime, in a large bowl, blend cornstarch with water. When smooth, add the chicken broth and soy sauce to the cornstarch-water mix. Mix well and pour over the meat and vegetables. Bring to the boil, stirring until the sauce thickens. Reduce heat to low. Cover and simmer for 10 to 15 minutes. Serve over chow mein noodles.
