  2. 3 ounces blue stilton cheese

  3. 3 ounces bacon --

  4. 6 ounce

  5. 6 ounces celery -- chopped

  6. 2 ounces onion -- chopped

  7. 1/2 ounce cornstarch

  8. 1 ounce butter

  9. 1 1/2 cups chicken stock

  10. 1 1/2 cups milk

  11. salt & pepper to taste

  12. 1 pinch paprika

  1. Chop bbacon finely. Put in pan heat gently; then drain. Stir in celery onions and butter and cook slowly, stirring well until celery and onions are colored. Sprinkle in cornstarch and cook for 1 minute. Gradually add milk, pepper. Bring to boil and simmer for10 minutes. Strain or puree in a blender. Reheat, crumble in cheese and sprinkle with paprika. Makes 4-6 servings
