  2. 4 baked potatoes, about 8 ounces each 1 cup small broccoli florets

  3. 1 cup shredded Cheddar cheese

  4. 2 green onions, thinly sliced

  5. 1/2 cup sour cream

  6. 1/4 cup milk

  7. 1/2 tsp. salt

  1. Preheat oven to 400 degrees. Cut off the top 1 inch of each potato. Scoop out the potato pulp leaving the potato skins intact. Transfer the pulp to a medium bowl. Stir in broccoli florets, Cheddar cheese, green onion, sour cream, milk and salt. Spoon mixture into the potato shells. Transfer stuffed potatoes to a baking sheet. Bake 30 minutes. Serve hot.
