  1. 2 Tomatoes (peeled, seeded & chopped)

  2. 1/4 Chopped fresh parsley

  3. 2 Basil

  4. 1 1/2 Minced garlic

  5. 1 1/2 Fresh lemon juice

  6. 1 1/2 Olive oil

  7. 1/2 Fresh mint

  8. 1/2 Pepper

  9. 1/4 Crushed red pepper

  10. 1/8 Salt

  11. 8 Pasta - (rigatoni, cooked)

  12. Fresh basil sprigs (opt.)

  1. Combine the first ten ingredients in a bowl. Let stand at room temperature for an hour. Cook the pasta according to the package directions, omitting any salt and fat; drain. Add the pasta to the tomato mixture and toss well. Garnish with fresh basil sprigs, if desired. Serve immediately.
