  1. Chocolate Turtle Cheesecake

  2. 2 cups vanilla wafer crumbs

  3. 6 tablespoons margarine, melted

  4. 14 ounces caramels

  5. 5 ounces evaporated milk

  6. 1 cup pecans, chopped, toasted

  7. 16 ounces cream cheese, softened

  8. 1/2 cup sugar

  9. 1 teaspoon vanilla

  10. 2 eggs

  11. 1/2 cup semi sweet chocolate pieces, melted

  12. Combine crumbs and margarine; press into bottom and sides of 9 inch

  13. springform pan. Bake at 350 10 minutes.

  14. In a 1 1/2 quart heavy saucepan, melt caramels with milk over low

  15. heat. stirring frequently, until smooth. Pour over crust. Top

  16. with pecans. Combine the cream cheese, sugar and vanilla, mixing

  17. at medium speed on electric mixer until well blended. Add eggs,

  18. one at a time, mixing well after each addition. Blend in chocolate;

  19. 350, for 40 minutes. Loosen cake from

  20. rim of pan; cool before removing rim of pan. Chill. Garnish with

  21. whipped cream, additional chopped nuts and maraschino cherries if

  22. desired.
