  1. 500g packet dried linguine (or fettucine)

  2. cup olive oil

  3. 1 clove garlic, sliced

  4. 1 punnet cherry tomatoes

  5. 1 x 175g packet hot-smoked salmon flaked into pieces (if you can't find this, use canned red salmon)

  6. 1 cup olives, pits removed

  7. 1 cup fresh basil leaves (stalks removed)

  8. cup fresh parsley leaves

  9. Juice and finely grated peel of one lemon

  1. Cook pasta in a large pot of slated water according to packet instructions.

  2. Meanwhile, heat oil in a large saucepan and add garlic. Reduce heat and add tomatoes, allowing to cook slightly.

  3. Drain pasta and return to the saucepan. Add the tomatoes, garlic and olive oil plus all the remaining ingredients. Toss gently to combine and serve warm with cracked pepper.

  4. The hot-smoked salmon adds wonderful flavour.
