  2. 1 2/3 cup(s) vegetable broth

  3. 1 teaspoon(s) Kosher salt

  4. 3/4 cup(s) shredded carrots

  5. 1/3 cup(s) chopped cilantro

  6. 2 chopped , sliced 2 tablespoon(s) fresh lime juice

  7. 1 tablespoon(s) olive oil

  8. 1 teaspoon(s) Dijon mustard

  9. 1/4 teaspoon(s) ground pepper

  1. Rinse quinoa well in a fine-mesh sieve under cold running water for 2 minutes. Add to a saucepan with broth and 1/2 teaspoon salt; bring to a boil. Reduce heat to low, cover, and simmer 15 minutes until broth is absorbed.

  2. Transfer to a large bowl; add remaining ingredients. Toss to combine.
