  1. 1 cup water

  2. 2-inches fresh ginger root, peeled and sliced finely

  3. 1 1/2 cups super fine sugar

  4. Juice of 2 lemons

  5. Vodka, as desired, chilled

  6. 1 quart club soda, chilled

  7. 1 lemon finely sliced for garnish

  8. 2 stalks trimmed lemon grass , optional

  1. Begin by making a lemon ginger simple syrup : In a medium saucepan combine 1 cup of water with sliced fresh ginger, lemon juice and sugar. Stir well and bring to a simmer , stirring until sugar has dissolved completely. Remove from heat and allow to cool with sliced ginger in the liquid - about 10 minutes. Once cool, place in the refrigerator . Strain out ginger before using.

  2. Fill a high-ball glass with ice . Add vodka (if desired). Top with 2-3 thin slices of lemon. Add 1/2 cup of syrup and top off with chilled club soda. Garnish with a slice of fresh ginger if desired.
