Impossible Pumpkin Pie

    1. 3/4 cup sugar

    2. 2 tbsp. margarine

    3. 2 eggs

    4. 2 1/2 tsp. pumpkin pie spice mix

    5. 1/2 cup Bisquick baking mix

    6. 1 13-oz. can evaporated milk

    7. 1 16-oz. can pumpkin

    8. 2 tsp. vanilla

    1. Heat oven to 350 degrees. Grease pie plate. Beat all ingredients until smooth (1 minute in blender or 2 minutes with hand mixer). Pour mixture into pie plate. Bake until inserted knife comes out clean, about 50 to 55 minutes.
