  1. 1-1/2 cups torn fresh spinach

  2. 1 cup cooked rice

  3. 2 celery ribs, thinly sliced

  4. 1/2 cup sliced fresh mushrooms

  5. 1/2 cup golden raisins

  6. 1/2 cup salted cashews halves

  7. 1/2 cup chopped red onion

  8. 1-1/2 teaspoons minced fresh parsley

  9. 3 tablespoons vegetable oil

  10. 3 tablespoons soy sauce

  11. 1 garlic clove, minced

  12. 1/2 cup chow mein noodles

  1. In a bowl, combine the first eight ingredients. Combine the oil, soy sauce and garlic; pour over salad and toss to coat. Sprinkle with chow mein noodles. Yield: 4 servings.
