  1. 3 1/3 cups all-purpose flour

  2. 2 1/2 teaspoons baking powder

  3. 1/2 teaspoon salt

  4. 1/4 cup canola oil

  5. 1 1/4 cup sugar

  6. 2 large egg whites

  7. 2 large eggs

  8. 1 teaspoon finely grated lemon zest

  9. 1 teaspoon finely grated orange zest

  10. 1 teaspoon almond extract

  11. 1 teaspoon vanilla

  1. Sift together the flour, baking powder and salt in a bowl. In another bowl, beat the wet ingredients together until well blended. Gradually stir the dry ingredients into the wet ingredients, a little at a time until well blended and smooth. Shape the biscotti dough into two even shaped logs. Leave space between the two logs as they will need space to expand. Flatten each log slightly. Bake for 25 minutes at 400 deg F.
